The Seeing Eye Cookbook Project

In honor of The Seeing Eye’s 90th anniversary, a graduate committee, including myself, produced a cookbook of some of The Seeing Eye’s best-loved recipes for sale online.

Since 1929, The Seeing Eye, Inc. located in Morristown, New Jersey, has matched more than 17,000 specially bred and trained guide dogs with blind men and women from across the United States and Canada. 

Affectionately titled “Pawsitively Delicious Recipes“, the book includes recipes for everything from breakfast and coffee break favorites, such as French Toast with Banana and Streusel Topping, to savory soups, salads, and sandwiches, and main dishes, such as roasted scallops with lime sauce, Korean-Style Short Ribs, and Game-Day Sloppy Jos. 

cookbook coverOf course, the book serves up a mouth-watering helping of dessert recipes, too, such as banana cupcakes with peanut butter frosting, gluten-free carrot zucchini cake, and a butter pecan white chocolate mousse pie!  There are even a few recipes for canine treats!
